The cooked must is a traditional culinary delight of the region Abruzzo, this is why it has been officially approved as traditional Italian regional food product (PAT) by the Italian Ministry of Agricultural, Food and Forestry Policies. During the Roman Empire it was used to sweeten and to bring out the taste of the food and it was even added to the water to have a fresh and energetic drink. Some kind of natural energy drink of the Roman Emperors. It is rich on minerals, vitamin A, B1, B2, B6 and C.
Our cooked must is still produced in the old way, pressing ripe Montepulciano d'Abruzzo grapes. This juice is then filtered, slowly cooked at a low temperature and then matured.
It forms the base of the recipes of our cookies, crostatine, small pies and of the famous “bocconotto”.
 
Why don't you try our “mosto cotto” for baking your cookies or as a topping for ice creams, panna cotta or other desserts? Some chefs even use it to bring out the taste of some savoury gourmet dishes.
